Gluten is one of the components of wheat protein, whose two protein fractions are gliadin and glutenin. Gluten sensitivity (celiac disease) is an intolerance to the gliadin component of wheat protein and to similar protein components in certain cereals, such as hordein found in barley and secalin found in rye.
